My sister found this recipe on the back of a bag of cappuccino chips. They are very good, like macaroons. I am sure they would be great with other flavors of chips as well. Make sure to line the cookie sheets, as they will stick. Ingredients:
2 2/3 cups shredded coconut (7 oz.) |
2/3 cup sweetened condensed milk |
1 teaspoon vanilla |
1 cup cappuccino chips |
Directions:
1. Preheat oven to 350°F Use nonstick cookie sheets or line them with parchment paper. 2. Combine the coconut, condensed milk, and vanilla in a medium bowl. Stir in chips. 3. Drop by well-rounded teaspoonfuls onto the lined cookie sheets. Bake 10-12 minutes (I did 7-8 minutes, watch carefully so they do not get too dark) until edges are lightly browned. Allow to cool before removing from paper or cookie sheet. |
