Makes 12. This mini cream cake got all the charms of cappuccino . It is soft , fluffy and light , topped with the coffee flavoured froth . Ingredients:
1 heaped tbsp cocoa in 2 tbsp boilng water - mix and cool the paste . |
110 g plain flour |
110g soft brownsugar |
110 g cold butter , diced |
2 l eggs |
1 tsp baking soda |
topping |
100 ml cream |
1 tbsp strong black coffee |
iicing sugar to taste |
chocolate pwd and rasps or chocolate covered beans |
Directions:
1. Pre heat oven at 180 deg C . 2. Beat everything until creamy . 3. Scoop then into 12 paper cases , 2/3 full . 4. Bake 20 to 25 mins . 5. Cool it . 6. Topping : 7. Whisk the cream , coffee and the icing sugar till stiff . 8. Drop a tsp onto each cake , dust with chocolate pwd . 9. Add chocolate covered beans/ buttons or Chocolare Rasps . |
