This breakfast resulted after the refrigerator was consulted on a Monday public holiday in South Africa. This also falls within the South Beach Diet program. No bread, low GI. Ingredients:
2 x eggs |
1/2 x onion, sliced |
1 x zucchini, sliced, ends removed |
2 x brown mushrooms - diced |
minced chilli |
olive oil |
4 x ham slices |
mozarella cheese |
salt & black pepper |
greens to garnish |
Directions:
1. Switch oven to grill 2. Put some olive oil in pan and heat 3. Add onions, saute for a 2-3 minutes 4. Add zucchini and mushrooms and minced chilli to taste 5. Add some freshly ground black pepper 6. Fry for a few minutes until browned 7. Place aside in separate dish 8. Place the ham slices in pan, two slices overlapping per serving 9. Divide cooked mixture on the two ham servings 10. Add an egg on the two servings, ensuring that the egg yolk remains on top in the middle of the mixture 11. Add some salt & pepper 12. Place two slices of mozarella cheese around the egg yolk 13. Place in oven under grill and grill until cheese is browned 14. Serve on garnished plate |
