On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share Ingredients:
1 (3 lb) trout or 1 (3 lb) whitefish |
2 tablespoons onions, chopped |
3/4 cup catsup |
2 tablespoons brown sugar |
2 tablespoons cider vinegar |
1/4 cup lemon juice |
2 tablespoons red hot sauce |
3 tablespoons worcestershire sauce |
1/2 teaspoon salt |
1/2 teaspoon ground pepper |
Directions:
1. Place fish in a greased shallow baking dish. 2. Brown onion lightly in fat. 3. Add catsup, brown sugar, cider vinegar, lemon juice, red hot sauce, worcestershire sauce, salt, and pepper. 4. Simmer for 5 minute. 5. Pour over fish. 6. Bake at 425* for 30 min or until fish is tender. 7. Serve on warm platter, garnish with parsley and lemon slices. |
