cooking spray |
3/4 lb chicken tenders |
2 scallions, minced |
1 garlic clove, minced |
1 teaspoon fresh ginger, minced |
1/4 cup soy sauce |
3 tablespoons dry sherry |
1 teaspoon cider vinegar |
2 tablespoons honey |
1/4 teaspoon cayenne pepper |
1 tablespoon sugar |
4 cups cooked rice |
Directions:
1. Spray wok or skillet with cooking spray. Heat over medium until hot. 2. Add chicken, scallions, garlic, and ginger and stir-fry until chicken is nicely browned; 4-5 minutes. 3. Combine remaining ingredients (except rice) and stir into chicken, and cook 3-4 minutes. 4. Serve over rice. |
