Cantaloupe With Blackberry Gele |

This is a great summer dessert. I made it tonight - we have been having a heat wave here in Southern California. Ingredients:
1 1/4 oz. envelope unflavored gelatin |
1-1/4 cups cold water |
6-7 sprigs fresh mint and some for garnish |
3/4 cup blackberry liqueur |
1 cantaloupe, scooped into balls and divided into four parfait glasses |
red & blue food coloring, optional. |
Directions:
1. Sprinkle gelatin over water in a shallow bowl that can withstand heat. Let stand about 5 minutes then set bowl over a pan of simmering water for about 3 minutes to dissolve gelatin. 2. Add mint and set aside for 12 minutes. 3. Remove mint, squeezing out excess liquid. 4. Add liqueur (plus 1 drop blue and 2 drops red food coloring, if desired for presentation) and stir. 5. Pour into an 8 inch square glass baking dish. 6. Put in freezer for 30 minutes +/- to set. 7. Store in refrigerator at least 15 minutes - more if needed. 8. Spoon the gelée over the melon balls garnish with reserved mint leaves and serve. |
