If you like chilled soups you'll find this delicious. It's unusual but very tasty. It can be served for breakfast, lunch or appetizer. The kids even like it. Very refreshing on a hot summer day. Ingredients:
3 - 5 peaches, peeled and chopped |
4 ounces crushed pineapple, in its own juice |
4 ounces pineapple chunks, in its own juice |
8 ounces orange juice |
4 tbsp lemon juice |
1/8 tsp nutmeg |
1/8 tsp cinnamon |
1 tsp vanilla |
1 medium to large cantaloupes, cut in cubes |
fresh basil, for garnish |
Directions:
1. Place chopped peaches into a blender along with the pineapple, orange juice, lemon juice, nutmeg, cinnamon, and vanilla. 2. Pulse to blend coarsely. 3. Add cantaloupe, start with 1 cup until you have a decidedly cantaloupe flavor, rather than a pineapple taste. 4. Refrigerate overnight so all the flavors blend together. 5. Stir before serving. |
