Very freshing and cool for those long hot summer days. Needs to refrigerate for 1 hour. Ingredients:
1 large ripe cantaloupe, peeled,seeds removed,and cut into chunks |
1/3 cup sugar |
3 tablespoons fresh lemon juice |
Directions:
1. Put the cantaloupe chunks into the container of an electric blender. 2. Puree until mixture is smooth. 3. Measure 4 cups of puree and discard the rest. 4. Return the 4 cups of puree back to the blender; add in the sugar and lemon juice. 5. Pulse quickly to blend. 6. Transfer mixture to a bowl; cover and refrigerate until chilled, at least 1 hour. 7. Freeze mixture in an ice cream maker according to the manufactuer's directions. |
