Nice to accompany fish or poultry. Ingredients:
1 1/2 cups cantaloupe, cubed |
2 tablespoons fresh lime juice |
1 tablespoon lime zest |
1/4 cup scallion, including tops, chopped |
2 tablespoons fresh ginger, peeled & minced |
1/2 jalapeno, minced |
1 tablespoon peanut oil |
Directions:
1. Mix all ingredients together in a small bowl. 2. Taste for seasoning,adjust if needed. 3. Let flavors blend for about an hour before serving in the frig. 4. Best if used within one day. |
