This recipe is adapted from the book The Vegetable Dishes I Can't Live Without by Mollie Katzen. Ingredients:
1 tablespoon extra virgin olive oil |
1 cup onion, minced |
1 (4 ounce) can diced green chilies |
1 teaspoon cumin |
1 teaspoon unsalted butter |
2 cups sweet corn |
1 small zucchini, diced |
1 cup red bell pepper, minced |
1/4 teaspoon salt |
1 teaspoon garlic, minced |
Directions:
1. Heat the olive oil in a large skillet over medium heat. Add onion, chiles, and cumin to the oil and saute for about 5 minutes until the onion becomes soft. 2. Add the butter, and then stir in the corn, zucchini, and red bell pepper. Add salt and garlic and stir well. Saute for 5 to 8 minutes longer. |
