This torta or Italian cake gives you the taste of cannoli with out all the work of making the cannoli shells! It is light, fluffy, and delicious and very impressive to serve to guests. Ingredients:
2 lbs ricotta |
1 2/3 cup sugar |
1 tsp vanilla |
1/4 cup white creme de cocoa or 1 tsp chocolate extract |
1/4 cup semi -sweet chocolate chips |
1/4 cup candied fruit, chopped (optional) |
2 1/2 dz lady fingers, split |
candied cherries or maraschino cherries |
Directions:
1. Combine ricotta, sugar, vanilla and creme de cocoa. 2. Beat at medium speed for about 10 minutes, until light and fluffy. 3. Mix in candied fruit and chocolate bits. 4. Line the sides and bottom of a 10 spring form pan with lady fingers. 5. Pour about 1/3 of the ricotta mixture over lady fingers and repeat layer, ending with lady fingers, making a pinwheel design. 6. Refrigerate at least four hours or overnight. 7. Decorate with cherries. |
