A perfect light summer meal. Ingredients:
1/2 cup cider vinegar |
1/3 cup olive oil |
2 1/2 teaspoons sugar |
3/4 teaspoon salt |
1/4 teaspoon pepper |
2 (15 ounce) cans cannellini beans, drained |
1 (7 ounce) jar roasted red peppers |
1 (6 1/2 ounce) can tuna in olive oil, undrained |
1/4 cup capers |
2 tablespoons chopped parsley |
Directions:
1. Mix ingredients 1-5. Gently combine all ingredients. Serve. 2. You can also add red onion and/or cherry tomatoes. |
