I found this recipe on the back of a Bush's cannellini bean can. I have not tried this. I think it sounds delicious and wanted to submit for safe keeping.
Ingredients:
4 slices of thick bacon, chopped
3 garlic cloves, minced
1 onion, chopped
1 can chopped spinach (can use frozen)
1 (14 ounce) can cannellini beans
1 (16 ounce) can light red kidney beans
1 (16 ounce) can dark red kidney beans
3 (14 1/2 ounce) cans chicken broth
1/2 cup sun-dried tomato, cut into strips
1 teaspoon dried basil
crushed red pepper flakes
shredded parmesan cheese
crispy french fried onion rings
Directions:
1. Cook bacon in large stock pot until done. Add garlic and onion. Sauté until brown. Mix in spinach. Sauté 2minutes. Add remaining ingredients and simmer 10 minutes. Add salt and pepper to taste. Top with cheese and crispy onions.
