Garlicy beans, great side dish
Ingredients:
16 ounces cannellini beans, rinsed
1/2 cup grape tomatoes, diced
1/2 cup frozen spinach
2 tablespoons olive oil
3 garlic cloves, minced
1/2 yellow onion, chopped
Directions:
1. Sautee the onion and garlic in olive oil until tender.
2. Add beans and mash a few with a fork; cook for 1-2 minutes.
3. Add spinach and tomatoes; sauté until spinach is thoroughly cooked.
