Cannellini Bean Appetizer |

Cannellini beans don't always need to be rustic. Here they're paired with lemon zest and either anchovies or caviar, the ultimate luxury food, for a decadent starter. Ingredients:
1 16-oz. can cannellini beans, well-rinsed and drained |
2 lemons, zest and juice |
3 tbsp. extra-virgin olive oil |
salt and freshly ground pepper |
anchovies or caviar, according to your own taste and budget |
2 tbsp. chives, minced |
Directions:
1. Rinse the beans in warm water, until heated through. 2. Meanwhile, in a medium-sized mixing bowl, whisk together the 3. lemon zest and juice and olive oil. Season with salt and pepper 4. and set aside. 5. Drain the beans and toss gently with the dressing. 6. Divide the beans evenly among 4 small serving plates. 7. Top each mound of beans with either 2 anchovies criss-crossed each other or 1 teaspoon of caviar and a sprinkling of chives. |
