My father is a picky eater but he does like beans so I always make them for our family get-togethers. I didn’t have time to make them from scratch this weekend so I came up with this based on ingredients I like in beans. Read more . Posting this here because Dad had seconds and I didn’t bring any home. :) Ingredients:
2 - 28 oz cans of baked beans (like bush’s) |
1/2 cup packed brown sugar (i had light on hand so that’s what i used) |
1 medium yellow onion, chopped |
3/4 cup root beer (not diet) |
1/2 cup ketchup |
2 tbs prepared mustard |
2 tsp worcestershire sauce |
5 or 6 slices of bacon, cooked and cut into 1/2 pieces (sister loves bacon so i use a lot!) |
Directions:
1. Drain off the excess liquid from the cans of beans. No need to put them in a colander – just tip the cans and let the excess liquid run out. 2. Put all the ingredients into a pot. Simmer over medium-low heat for 30 to 40 minutes until the onions get soft. I served these the next day so they sat in the refrigerator overnight, but they can be eaten right away as well. |
