CANDY PECAN ROLL DATED 1962 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baxter Estate in Dallas, Texas in 1982. This one is awesome. Another one I make at Christmas and Valentine’s day for special gifts. Read more . Yummy.
Ingredients:
1 cup granulated sugar
1 cup brown sugar
2 tablespoon corn syrup
2/3 cup milk
1/4 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1/2 cup finely chopped pecans
Directions:
1. In 2 quart saucepan mix sugar, milk, corn syrup and salt.
2. Cook over medium heat stirring constantly until sugar is dissolved.
3. Cook stirring occasionally to 234 degrees on candy thermometer.
4. Remove from heat and add butter.
5. Cool mixture to 120 without stirring.
6. Add vanilla.
7. Beat vigorously for 10 minutes with wooden spoon.
8. Shape candy into 12-inch roll.
9. Roll in 1/2 cup finely chopped pecans.
10. Wrap and chill until firm.
11. Cut into slices.
