CANDY APPLE PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamilton Estate in Terrell, Texas in 1982.
Ingredients:
1-3/4 cups unsweetened apple juice divided
1/3 cup cinnamon candies
1/2 teaspoon vanilla extract
1/4 teaspoon red food coloring
4 apples sliced
3 tablespoons cornstarch
1 graham cracker crumb pie crust
1-1/2 cups frozen whipped topping thawed
1/2 teaspoon ground cinnamon
Directions:
1. In large saucepan combine 1-1/2 cups juice, candies, vanilla, food coloring and apples.
2. Bring to a boil then reduce heat to low and simmer 15 minutes.
3. Combine remaining 1/4 cup juice and cornstarch in small bowl.
4. Stir into apple mixture then continue to cook until mixture boils and thickens.
5. Cook an additional 3 minutes then remove from heat and cool to room temperature.
6. Spoon apple filling into pie crust then refrigerate several hours.
7. Just before serving combine whipped topping and cinnamon in small bowl.
8. Top with whipped topping.
