My sister in law gave me this recipe, I'm not sure where she got it. It is really delicious. Any sweet potato lover would enjoy this. Ingredients:
6 medium sweet potatoes |
1 tsp nutmeg |
1 tsp cinnamon |
1 cup water |
1 cup sugar |
2 tsp vanilla extract |
8 tbsp margarine |
Directions:
1. Peel sweet potatoes and slice lengthwise. 2. Place in large pot, cover with water, and bring to a boil. 3. Drain half the water. 4. Place remaining water and potatoes in large skillet. 5. Sprinkle with half the nutmeg, cinnamon, and sugar. 6. Bring to a boil and cook for approximately 3 minutes. 7. Add remaining nutmeg, cinnamon, sugar, and vanilla. 8. Keep spooning liquid mixture over the potatoes while simmering for about 15 minutes or until the potatoes have absorbed all the syrup. 9. Serve. |
