We have this at Thanksgiving time every year. You can make it year round. Ingredients:
6 peeled and boiled sweet potatoes (or you can use a large can of drained yams) |
4 tbs butter |
1/3 cup brown sugar |
2 tbs orange juice |
1 tbs sherry |
1 tsp salt |
1/2 tsp cinnamon |
2 eggs |
15 oz can crushed pineapple drained extra well (squeeze or press them) |
small marshmellows |
Directions:
1. Pre heat oven to 350 2. place sweet potatoes;butter ;;brown sugar; o.j.;sherry ; salt and cinnamon; and 2 eggs in a large bowl. 3. Smash together (or beat with mixer) 4. pour into casserole dish 5. cover with crushed drained pineapple 6. cover pineapple with marshmellows 7. cook 30 min. |
