For years my mom made canned yams and baked them with marshmallows on top. This was my first experience with fresh yams and I became a convert (no more canned for me!!!) It of course is a great side dish to turkey on Thanksgiving. Ingredients:
3 yams (peeled and thinly sliced) |
1/4 cup margarine |
3/4-1 1/2 cup sugar (depending on how sweet you want it) |
1/2 teaspoon salt |
1 teaspoon vanilla |
1/4 cup water |
1 lemon, juice of (approx. 1 tablespoon) |
1 teaspoon nutmeg |
Directions:
1. Melt 1/2 of the margarine in a large pan. 2. Add the yams, sugar, salt, vanilla and water. 3. Cover and simmer 20 minutes or until tender. 4. Stir in the rest of the margarine, nutmeg and lemon juice. 5. Cook 10 minutes without the lid. |
