Candied Walnut Gorgonzola Salad |

A nice easy salad for Spring Ingredients:
1/2 cup sugar glazed walnuts, store bought or make your own |
1/4 cup sugar, if you make your own glazed walnuts |
3 cups mixed greens |
1/2 cup craisins |
1/2 cup crumbled gorgonzola cheese |
1 or 2 tablespoons raspberry vinaigrette, trader joe's has a nice one with walnuts and gorgonzola cheese |
1 tablespoon white vinegar |
1 tablespoon olive oil |
Directions:
1. If you are glazing your own walnuts, place sugar in a skillet over medium heat, stirring constantly until sugar dissolves into a light brown liquid 2. Add walnuts and toss to coat 3. Remove walnuts and cool on a sheet of foil 4. In a large salad bowl, put in the mixed greens, craisins, cheese, vinaigrette, vinegar and olive oil 5. Toss gently 6. Add candied walnuts and toss again |
