CANDIED SWEET POTATOES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Hamilton Estate in Allen, Texas in 2001. Ingredients:
4 medium sweet potatoes |
1/2 cup margarine |
3/4 cup granulated sugar |
margarine for greasing skillet |
Directions:
1. Peel potatoes and cut them lengthwise into slices that are 1/4 thick. 2. In a non-stick skillet melt enough margarine to cover bottom of pan. 3. Add potatoes and while turning them occasionally cook over medium heat until tender but firm. 4. In saucepan melt margarine then add sugar and stir until sugar melts. 5. Pour sugar mixture over potatoes. 6. Continue cooking and carefully turning potatoes until they are completely tender and browned. 7. They should be glazed by the sugar mixture. 8. Serve hot and spoon some of the extra syrup over the top. |
