Candied Sweet Potatoes

This is a very simple Candied Sweet Potato recipe that is common to serve for Thanksgiving and Christmas.
Ingredients:
5 -6 raw sweet potatoes
1 (16 ounce) can pineapple bits
1/2 cup honey
1/2 lemon, juice of
1/4 cup brown sugar
1 teaspoon nutmeg
2 teaspoons cinnamon
salt
1/2 cup butter
mini marshmallows
Directions:
1. Preheat oven to 350 degrees.
2. Peel and cube sweet potatoes. In a medium saucepan boil Sweet potatoes until cooked. Drain all excess water. Mash boiled potatoes with butter, pineapple bits, lemon juice and honey; DO NOT add milk.
3. In a medium bowl combine brown sugar, nutmeg, cinnamon, and a dash of salt; stir the dry mixture into the yams. Pour into a greased baking pan or casserole dish and bake for 30 minutes.
4. Remove dish from oven, cover with mini marshmallows & dabs of butter. Return to oven until marshmallows are golden brown.
