Candied Peach Sweet Potatoes |

QR Amy's recipe. Ingredients:
18 ounces canned sweet potatoes, drained (one 18 oz can) |
3 tablespoons brown sugar |
1 tablespoon margarine or 1 tablespoon unsalted butter |
1/4-1/2 cup miniature marshmallow (not colored) |
1/8 teaspoon ground ginger (stir into brown sugar) |
8 3/4 ounces peach slices |
Directions:
1. Preheat oven 375. 2. Slice up sweet potatoes. 3. In a 1 qt casserole, layer half the potatoes, half the brown sugar mixture, half the butter, half the peaches. 4. Repeat layers. 5. Bake uncovered in a 375 degree oven for 30-35 min or until potatoes are glazed. 6. Spoon liquid over potatoes once or twice. 7. Sprinkle with nuts and marshmallows and bake for 5 more minutes. Makes 4 servings. 8. I normally double this. 9. 1/4 - 1/2 cup chopped nuts (optional). |
