I am sharing another unique unusual recipe from my mom. Mom got this recipe from a German lady who made this sweet biscuit-kuchen pastry studded with candied fruits. It was served around Christmas time. Not a true cobbler but because it was studded or cobbled with fruit it was called cobbler Phot forth coming when I get a hold of candied fruit! Read more ! Ingredients:
1 recipe rich kuchen pastry or biscuit dough to fit a biscuit pan |
rum , vanilla, lemon or almond extract to flavor dough |
candied fruit, about one cup, esp candied cherries finely diced |
gold and dark raisins as desired ( plump in rum.brandy and drain well ) optional |
finely chopped nuts as desired ( optional )- mom did not use nuts in this recipe |
powdered sugar icing or sugary glaze as desired or just dusting of powder sugar |
Directions:
1. Grease a 7 x 11 inch biscuit pan. 2. Prepare you favorite rich baking powder/kuchen /pastry and flavor it with rum, almond or vanilla. etc. 3. Stir in finely diced candied fruit that has been coated with some flour ( add some nuts or raisins as desired - raisins may be plumped in rum and drained etc. ) and pat dough into pan . 4. Bake 350 till pale golden and tested done. 5. When cool,drizzle with a powdered sugar icing. 6. Cut into squares. |
