Ingredients:
8 small,firm evenly shaped apples
8 stick(s) wooden
5 cup(s) sugar
4 cup(s) light corn syrup
1 teaspoon(s) vanilla extract
red food coloring
chopped nut (optional)
Directions:
1. )Wash and dry apples.2)Insert wooden sticks partway through stem end.3)Set aside on waxed paper.4)In heavy saucepan,combine sugar and syrup.5)Bring to boil over medium heat,with out stirring.6)Continue boiling with out stirring about 20 minutes,or until a candy thermometer reaches 280`f or soft crack stage (if you drop a little syrup in cold water,it will separate into hard but not brittle threads).7)Remove from heat.8)Stir in vanilla and enough red food coloring to tint a bright red.9)Mix lightly.10)Working quickly before syrup hardens,tip pan slightly and swirl each apples in syrup,coating well.11)Drain extra syrup into pan.12)Dip apples into chopped nuts,if used.13)Place apples,stick up,on waxed paper.14)Let cool about 1 hour,or until firm.15)If syrup hardens,heat over very low heat.
