Goes great w/ my double dipped fried chicken! Ingredients:
2 1/2 lbs. red potatoes-boiled in salted water til almost tender-dressing will tenderize (cook) them more (cool to warm) |
3 tbsp apple cider vinegar-or more! -to taste |
1 c hellmans mayonaise |
2 tbsp dijon mustard |
1/2 c red onion |
3 celery stalks -chopped |
1 tbsp dill pickle juice |
1 tbsp chopped fresh dill |
salt & cracked black pepper to taste |
chopped green onions for garnish |
Directions:
1. Slice potatoes into 1 cubes 2. in a bowl mix mayo, mustard,vinegar,celery,dill pickle juice,fresh dill,salt,pepper & red onion 3. (if you have time-make this afew hours-or up to a day- ahead and let marry in fridge) 4. Gently fold w/ potatoes 5. garnish w/ green onions 6. ENJOY! |
