Use leftover BBQ chicken to create a southwestern flavor with cornpeppers,cheese and barbeque sauce. Ingredients:
5c. shreaded cooked chicken |
1(10oz) can whole kernal corn,drained |
1 green bell pepper,seeded and diced |
5 green onions,chopped |
2c shreaded cheddar cheese |
1(8oz) pkg. cream cheese |
3tbs barbecue sauce |
1sp cayenne pepper |
1/2tsp paprika |
salt and pepper to taste |
11/2(14oz)pkgs wonton wrappers |
1/4c veg oil |
Directions:
1. In a large bowl,toss together the chicken,corn,green pepper,green onions and cheddar cheese. In separate bowl,stir together the cream cheese,barbecue sauce,cayenne pepper,paprika,salt and pepper. Blend the cream cheese mixture into the chicken mixture until everything is evenly coated 2. Preheat oven to 400 3. Lay out wonton wrappers on a clean surface and place a spoonful of the chicken and cheese filling on each one. Fold into triangles or rolls,sealing with a bit of water if necessary. Place onto baking sheets and brush lightly with oil or spray with cooking spray. 4. Bake for about 10 mins in preheated oven,turning once,until golden brown. |
