I could never figure out why my mother called these Canadian Brownies - until my daughter and family moved to Detroit. On a visit, we wondered into a chain called Hortons, and there in the bakery case was an International Bar . Read more ...it looked strangely familiar. We purchased one, bit into the layers, and sure enough - it was MY Canadian Brownie. Since I learned this was a Canadian chain, I finally understood where the name came from for these bars! Ingredients:
first layer |
1/2 cup butter, softened |
5 tablespoons white sugar |
4 tablespoons baking cocoa |
1 egg |
1 teaspoon vanilla extract |
2 cups graham cracker crumbs |
1 cup coconut |
second layer |
4 tablespoons butter, softened |
2 tablespoons cook and serve vanilla pudding mix (not instant pudding mix) |
3 tablespoons milk |
2 cups powdered sugar |
chocolate frosting |
6 tablespoons milk |
6 tablespoons butter |
11/2 cups white sugar |
1/2 cup milk chocolate or sem-sweet chocolate chips |
Directions:
1. For first layer, hand mix 1/2 cup butter, white sugar, cocoa, egg and extract until fluffy. 2. Stir in graham cracker crumbs and coconut. 3. Press into an ungreased 7x11 pan; cover and refrigerate 1 hour. 4. For second layer, mix 4 tablespoons butter, the dry pudding mix, milk, and powdered sugar until fluffy; spread over chilled crust and refrigerate 1 hour. 5. To make the frosting, bring milk, butter and sugar to a gentle boil in a medium saucepan; boil an additional 30 seconds. 6. Remove pan from heat and stir in chips; stir vigorously until chips melt and frosting becomes shiny. 7. Cool frosting to room temperature; pour over second layer. 8. Chill well before cutting; keep refrigerated. |
