A nice salad for lunch or a light dinner. From Joyce's Fine Cooking. Ingredients:
2 cups salmon, cooked |
3 hard-boiled eggs, chopped |
1/2 cup cheddar cheese, diced (may use other cheese) |
3 medium tomatoes, diced |
salt and pepper |
1 1/2 cups macaroni, -cooked (shell, spiral, or elbow) |
1/4 cup diced sweet gherkin |
2 tablespoons sweet pickle juice |
1/2 cup celery, chopped |
3/4 cup mayonnaise |
Directions:
1. Mix all ingredients together well and chill till ready to serve. 2. Nice served over lettuce leaves. Enjoy! |
