Canadian Onion Soup

This hearty Canadian Onion Soup is a meal in itself, and will warm a chilly body on a cold winter day!
Ingredients:
3 tbsp canola oil
4 lb sweet onions, thinly sliced
3 cloves garlic, minced
1/2 cup pure maple syrup
1 900 ml tetri-pack of fat free beef broth or your own beef broth
1 tbsp chopped fresh thyme leaves
salt & pepper tp taste (or mccormick’s no salt added citrus & pepper)
6 slices of baguette, toasted
2 cups shredded five year old canadian cheddar cheese
Directions:
1. Heat oil in a Dutch oven set over medium heat.
2. Add onion, and cook, stirring frequently, for 30 minutes, or until well caramelized.
3. Add garlic and cook an additional 30 seconds,
4. then stir in the maple syrup.
5. Add the broth and half the thyme, and bring to a boil.
6. Reduce heat and simmer for 20 minutes.
7. Season to taste with salt & pepper as desired.
8. Preheat the broiler.
9. Divide the soup between 6 oven-proof bowls.
10. Top with toast slices and equal amounts of cheese.
11. Broil for 2 – 3 minutes, until cheese melts and lightly browns.
12. Garnish with remaining thyme and serve.
