Canadian Indian Guide's Chowder |

My parents used to run a fishing camp in NW Ontario, and the native guides would often cook this recipe for the 'shore lunch' for the fishing guests. Ingredients:
4 cups diced potatoes |
3 cups diced onions |
1 tablespoon salt |
1 teaspoon pepper |
1 quart boiling water |
5 cups diced raw fish |
2 cups milk |
2 cups half-and-half or 2 cups cream |
chopped parsley |
Directions:
1. Add potatoes, onions, salt and pepper to one quart boiling water. 2. Cook 12 mins or til vegetables are almost tender. 3. Add fish. 4. Cook 10 mins more. 5. Add milk and cream. 6. Heat 15 mins more without allowing chowder to boil. 7. Serve garnished with parsley. |
