I haven't tried this one yet, but it sounded really darn good! From Canadian Living Test Kitchens Ingredients:
1/2 cup beer or 1/2 cup milk |
1 1/2 cups old cheddar cheese, shredded (canadian) |
2 eggs, lightly beaten |
2 teaspoons dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/4 teaspoon worcestershire sauce |
4 slices whole wheat bread, toasted (think slices) |
1 teaspoon white vinegar |
4 eggs |
1 pinch cayenne pepper |
Directions:
1. In saucepan, bring beer to simmer over medium heat; stir in cheese until melted. Whisk in beaten eggs, mustard, salt, pepper and Worcestershire sauce; cook until thick enough to coat back of spoon, 2 minutes. 2. Place toast on rimmed baking sheet; pour cheese mixture over each. Broil until cheese is golden, about 5 minutes. 3. Meanwhile, in shallow saucepan, bring 3 inches (8 cm) water to boil. Add vinegar; reduce heat to simmer. One at a time, break whole eggs into dish and gently slip into water; cook until whites are set and yolks are still liquid, 3 to 5 minutes. With slotted spoon, remove and drain well. Spoon onto each toast; sprinkle with cayenne. |
