A fine Canadian Cheddar Cheese Soup for those cold days. Ingredients:
2 tablespoon butter |
1/4 cup finely chopped onion |
1/4 cup finely chopped carrot |
1/4 cup finely chopped celery |
2 tablespoons flour |
1/4 teaspoon dry mustard powder |
1/8 teaspoon grated nutmeg |
1/4 teaspoon fine ground white pepper |
3 cups chicken stock |
1-1/2 cup cream |
1 cup milk |
1-1/2 cup shredded chedar cheese |
1/4 teaspoon worcestershire sauce |
1/2 teaspoon salt |
Directions:
1. In a heavy saucepan, melt butter, cook onion, carrot, and celery for about 5 minutes or until tender; DO NOT BROWN! 2. Stir in flour, mustard, nutmeg and pepper; cook for 2 to 3 minutes. 3. Stir in chicken stock; simmer for about 20 minutes or until vegetables are tender. 4. Strain, sieve or puree the vegetables until smooth. 5. Add cream and milk and bring almost to a boil but DO NOT BOIL! 6. Add cheese and heat until the cheese is just melted, stirring constantly. 7. Add salt and stir in Worcestershire Sauce. 8. Serve garnished with chopped parsley, chopped chives or freshly cracked black pepper. |
