Canadian Bacon-Stuffed Mushrooms |

This savory filling makes these appetizers a crowd-pleaser! Great to serve during the holidays. Recipe is from Simple and Delicious. Ingredients:
30 -35 large fresh mushrooms |
1/4 lb canadian bacon, diced |
1/3 cup diced sweet red pepper |
1/4 cup diced red onion |
1 teaspoon minced garlic |
1/2 teaspoon seasoning salt |
1/2 teaspoon pepper |
2 tablespoons vegetable oil |
1/2 cup goat cheese or 1/2 cup feta cheese, crumbled |
1/2 cup cheddar cheese, shredded |
Directions:
1. Remove stems from mushrooms and finely chop; set caps aside. 2. In large skillet, saute the mushroom stems, bacon, red pepper, onion, garlic, salt and pepper in oil until vegetables are crisp-tender. 3. Remove from the heat. 4. Stir in cheeses. 5. Fill each mushroom cap with about 1 T of filling. 6. Place on foil-lined baking sheets. 7. Bake at 400 degrees for 16-20 minutes or until mushrooms are tender. |
