Canadian-Bacon-And-Cheese Quesadillas With Arugula Salad |

Bacon's not just for breakfast. And Canadian bacon is lower in fat than other varieties, so you can enjoy mozzarella cheese guilt-free. Ingredients:
8 (8 inch) flour tortillas |
8 slices canadian bacon |
1 cup shredded mozzarella cheese |
1 yellow bell pepper, diced |
4 cups arugula, trimmed |
1 tablespoon vinaigrette |
Directions:
1. Preheat oven to 400°F Coat 2 large baking sheets with cooking spray. Place 2 tortillas on each baking sheet. Divide 8 slices of Canadian bacon and 1 cup cheese among tortillas. Sprinkle each tortilla wit 3 tablespoons of bell pepper. Top with 3 tablespoons bell pepper. Top with remaining tortillas. Bake at 400°F for 5 minutes, or until cheese melts. Toss 4 cups arugula with 1 tablespoon vinaigrette. Cut quesadilla into 4 wedges, and sprinkle with remaining bell pepper. Serve quesadillas with arugula salad. |
