Not a pie, yet more than a cake. The sour cream topping puts this one over the top. Not sure this is really Canadian, but it's so good, if I were Canadian, I would be proud to claim it! From my Olde recipe file. Ingredients:
2 cups flour |
1/2 teaspoon salt |
1/4 teaspoon baking powder |
2 tablespoons sugar |
6 tablespoons butter |
2 -4 apples, depending on size, pared and sliced |
1/4 cup raisins (optional) |
3/4 cup sugar |
1 teaspoon cinnamon |
2 egg yolks |
1 cup sour cream |
Directions:
1. Sift dry ingredients together. 2. Cut in butter as for pie crust. 3. Pat into ungreased 8 square baking pan. 4. Arrange pared, sliced apples over (and 1/4 cup optional raisins). 5. Sprinkle with cinnamon/sugar mixture. 6. Bake 15 minutes at 400. 7. Spread sour cream/egg topping over apples and bake another 30 minutes. |
