Cam's Favorite Chicken Nachos |

Nephew's favorite. Add sour cream/guacamole if you like. Ingredients:
4 chicken breasts, boneless, skinless |
2 tablespoons vegetable oil |
1 (1 1/4 ounce) package taco seasoning mix |
2 garlic cloves, minced |
tortilla chips |
1 (16 ounce) can refried beans |
1 (16 ounce) jar chunky salsa (mild or medium) |
3 cups shredded velveeta mexican cheese |
Directions:
1. Cut chicken into 3/4-inch cubes. 2. Combine oil, taco seasoning mix, and garlic in a medium bowl; add chicken; stir to coat. 3. Heat a large non-stick skillet on medium heat; add chicken, half at a time; stir-fry about 5 minutes or until browned and no longer pink in center; remove from skillet with slotted spoon. 4. Spread chips evenly on baking pan (cookie sheet or jelly roll pan); Sprinkle chicken over chips. 5. Combine beans and salsa; spoon over chicken. 6. Sprinkle with cheese. 7. Bake at 425 degrees for 5-7 minutes or until cheese melts; serve immediately. |
