We have been eating this for years. Thought I would share. Ingredients:
5 large potatoes, skin on, cut into bite sized pieces |
2 medium carrots, peeled, and cut into 1/2 inch cubes |
1 red onion, chopped |
1 stalk of celery chopped |
olive or canola oil |
1 tsp of garlic powder |
1 tsp paprika (half tried smoked as well, is lovely) |
2 tsp of sea salt |
1 tsp pepper |
fresh chopped parsley |
Directions:
1. On two large pieces of foil, divide potatoes, carrots, onion, celery, spices, salt and pepper. Drizzle with oil. 2. Fold foil over potatoes, wrap again in another sheet of foil (make as tight as possible as you don't want the oil to leak ). 3. Place on bbq at medium high heat, turning often for 45 minutes. 4. Remove from heat and let stand 5 minutes. 5. Transfer to a large bowl and sprinkle with fresh chopped parsley. 6. (My oldest likes a dab of sour cream on hers). |
