When we go camping this is one ofthe many breakfast items I serve up. Its a favorite.
Ingredients:
1 lb. bacon
1 onion, finely chopped
1 green pepper, chopped
1 lb. frozen hash browns
1 doz. eggs
salt and pepper, to taste
1 cup shredded cheddar cheese
Directions:
1. Chop and fry bacon; drain and set aside.
2. Cook onion, green pepper and hash browns in 1/2 of bacon drippings, until done.
3. Stir up eggs; pour oiver potatoes, onions and green peppers.
4. Salt and pepper to taste.
5. Sprinkle bacon and cheese on top.
6. Cook over fire until eggs are set.
7. I also use the O'Brien Hash Brown Potatoes as they already have the onions and green peppers added to them.
