Campbells Vegetable Beef Soup |

I'm not sure where I got this recipe. It's a copy cat recipe I got off the internet years ago. It's a big favorite here and when I start cooking it , I get a big Yum from the hubby. He knows there'll be leftovers. Ingredients:
2 to 3 lbs of stew meat |
1/4 c of butter |
3 quarts of water |
1 tsp pepper |
1 tbsp salt ( i use about half) |
1 1/2 cup chopped carrots |
3 medium sized potatoes, peeled and cubed |
1 cup chopped celery |
1/4 c dried onions |
1/2 c barley |
6 cubes of beef bouillon |
Directions:
1. Cut the meat and veggies to the size you prefer. I prefer them cut about the size that you get in a can of the soup. 2. Brown the meat in butter. 3. Add all ingredients to a 6 quart crock pot. ( A smaller one won't hold it all !) 4. Cook on low for several hours. 5. Optional cooking methods: Pressure cook for 20 minutes or cook in a large pot on the stove over low heat for 2 to 3 hours. |
