Ingredients:
1/2 pound bacon, diced |
1 medium onion, chopped |
1 medium-size green pepper, seeded and chopped |
2 1/2 pounds potatoes, scrubbed and sliced |
1 (10-ounce) can tomatoes with chiles |
salt and pepper to taste |
Directions:
1. Cook bacon in a large skillet until browned. Add onion and green pepper; sauté until tender. Drain off fat, if desired. 2. Add potatoes and tomatoes, stirring lightly. Reduce heat; cover and simmer 15 minutes or until potatoes are tender. Add salt and pepper to taste. |
