Camp Eden Individual Cheesecakes

Another wholefood recipe from the Camp Eden Health Retreat. Wonderful but very rich. Also no bake. Time does not include refrigeration time.
Ingredients:
1 cup almonds (soaked overnight)
1 cup mejool dates (depitted)
1 kg quark
2 teaspoons vanilla
3 tablespoons honey
Directions:
1. In a food processor process almonds until a fine meal. Add dates and process to form the base of the cheescakes.
2. Line muffin pan with cookie paper.
3. Roll base out with a rolling pin between two sheets of baking paper.
4. Use a cookie cutter to form the base and place in the bottom of the cookie paper.
5. Mix the quark, vanilla and honey togtehr and spoon over the base.
6. Place in the freezer for 10 minutes to set or the fridge for a few hours.
7. Delicious!
