Camarones Enchilados Cuban Shrimp In Sauce |

You can 'Spice this up' with Tabasco and serve as an appetizer with some bread, or serve it as a meal over White Rice. Ingredients:
2 lbs. shrimp |
vinegar |
1/2 cup olive oil |
1 onion |
3 cloves garlic |
1/3 teaspoon of red pepper flakes |
1 (8 oz.) can of tomato sauce |
1/2 cup vino seco (dry white wine) |
1 tbsp. vinegar |
1 1/2 tsp. salt |
1 tsp. pepper |
1 tsp. tabasco (or to taste) |
1 large roasted red pepper, chopped |
Directions:
1. Clean shrimp with white vinegar and water bath, 2. Sauté the shrimp in olive oil for 2 minutes. 3. Add in the finely chopped onion and garlic, sauté for about 5 minutes. 4. Add in the tomato sauce, dry white wine, vinegar and Tabasco. 5. Cover and cook on low heat for about 20 minutes. 6. Uncover, remove from heat and add salt, pepper, and pimentos. |
