From my collection of handwritten recipes. A Philippine recipe. Ingredients:
1 lb shrimp, shelled and deveined (tail left on) |
1 lemon, juice of |
salt & freshly ground black pepper |
2 eggs, beaten |
1 cup cornstarch |
soy sauce and lemon juice |
Directions:
1. Shell shrimp, leaving tail. Devein and split back in half, being careful not to separate halves (butterfly). Marinate in lemon juice, salt and pepper for about 15 minutes. Dip shrimp in batter made from mixture of beaten eggs and cornstarch. Deep fry and drain on paper towel. Serve with soy sauce and lemon juice. 2. Note: Great with sweet and sour sauce too! |
