A refreshing change to regular cabbage slaw and very colorful. One of my all-time favorites! Ingredients:
6 c. cabbage, chopped (or use prepared mix) |
1-2 c. sharp cheddar cheese, cubed |
1 can mexicorn, drained |
1 c. black olives, sliced |
2 tbsp. vinegar |
2 tbsp. sugar |
1 c. mayo or salad dressing (fat free works great) |
4 tsp. prepared mustard |
1/2 tsp. celery seed |
Directions:
1. Combine cabbage, cheese, Mexicorn, and black olives. Set aside. 2. Combine vinegar, sugar, mayo, mustard, and celery seed. Mix with cabbage mixture. 3. Refrigerate overnight or at least several hours. 4. In place of Mexicorn, use a can of corn plus one-fourth to one-half cup each chopped green and red pepper. |
