This is another cookie recipe that I make every year during the holidays. It has so many great flavors intertwined. Enjoy Ingredients:
2-1/2 squares unsweetened chocolate |
2/3 cups hot water |
1-1/3 cups granulated sugar |
1-1/3 cups chopped pitted dates |
1/4 cup butter |
1 teaspoon vanilla |
3/4 cup butter |
1-1/4 cup firmly packed light brown sugar |
1-1/2 cup sifted all purpose flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1-1/2 cups rolled oats |
1 cup chopped nuts |
Directions:
1. Combine chocolate and hot water in saucepan. 2. Cook stirring over low heat until chocolate melts. 3. Add granulated sugar and stir until dissolved then add dates. 4. Cook until mixture thickens about 5 minutes. 5. Add 1/4 cup butter then blend in vanilla and remove from heat and cool. 6. Cream 3/4 cup butter and gradually add brown sugar creaming until light and fluffy. 7. Sift flour with salt and soda then add to creamed mixture and blend well. 8. Add oats and nuts then mix until crumbly. 9. Press half nut mixture into greased rectangular baking pan. 10. Spread chocolate date mixture over it and add second layer of nut mixture. 11. Bake at 350 for 30 minutes. 12. Serve warm with ice cream or cool and cut into 30 squares. |
