Calves Liver With Bacon And Onion |

This was my Mom's favorite meal Ingredients:
4 pieces of calves liver |
2 large onions, sliced |
olive oil |
1/2 lb bacon, diced |
1/2 cup flour |
salt and pepper to taste |
Directions:
1. In large skillet, cook bacon until crisp 2. Remove bacon, set aside 3. Mix flour and salt and pepper 4. Place flour mixture on a large plate and dredge liver 5. Place in fridge until ready to cook 6. Take half of bacon drippings and add to another large skillet 7. Heat to medium and add onions and cook until tender 8. In other skillet, heat bacon drippings on medium high heat 9. Add calves liver and cook a minute or 2 on each side 10. Plate and top with onions and bacon bits |
