This Caribbean dish will be a favorite! Ingredients:
1 lb. of callaloo leaves or spinach |
1 chopped onion |
1/2 lb. of salt beef, fat removed and diced |
6 tbsp. of minced shallots |
1/4 tsp. of dried thyme |
1 chopped green chile pepper |
1 c. of okra |
1/2 lb. of crabmeat |
6 c. of chicken stock |
1/2 tsp. of ground black pepper |
Directions:
1. First you want to remove the stems of the callaloo leaves, and then chop. 2. Next in a large pot you can add the callaloo leaves, chicken stock, onion, beef, pepper, shallots, thyme, chili pepper, and the crab meat. 3. Put a lid on the pot and let this cook over low flame about 25 min. 4. Next you can add in the oka cooking approx. 8 min. 5. Now you wan tto remove the chili pepper . 6. In your blender puree the soup. 7. Reheat if needed. 8. Ladle and serve! |
